Fermentation temperature

The optimal fermentation temperature of 37 °C (99 °F) represents a good compromise: warm enough to activate L. reuteri, yet gentle enough to preserve the heat-sensitive B. breve, B. bifidum and B. infantis.


Three key strains, strong microbiome support

This starter set contains Limosilactobacillus reuteri, a clearly defined Lost Species, a microbial species that has become rare or nearly disappeared from modern Western gut ecosystems.

Bifidobacterium breve, Bifidobacterium bifidum and Bifidobacterium infantis are traditional early-life colonizers of the human gut. They are highly prevalent in infants and in traditional societies but have declined markedly in many Western populations, especially in adults. For this reason, they are increasingly discussed in research as potential Lost Species or declining keystone strains in modern microbiomes.

This combination therefore unites one clearly defined Lost Species (L. reuteri) with three historically central bifidobacterial strains that play a crucial role.

 

4-Strain Yogurt: L. reuteri, B. breve, B. bifidum & B. infantis

This special combination unites the Lost Species Limosilactobacillus reuteri with three foundational bifidobacterial strains to create a powerful yogurt that goes far beyond classic probiotics.

All four strains support the microbiome in complementary ways and act through the gut-brain and gut-immune axes to influence systemic health. L. reuteri, for example, stimulates the release of oxytocin, the “bonding and healing hormone”, which has wide-ranging effects on mood regulation, sleep quality, muscle metabolism and immune balance.

B. breve contributes to the production of short-chain fatty acids and supports immune modulation. B. bifidum plays a key role in maintaining the intestinal barrier and interacting with mucosal immunity. B. infantis is particularly known for its ability to utilize complex carbohydrates and to promote anti-inflammatory signaling, helping to stabilize the gut environment.

What happens when re-culturing?

A finished yogurt can be reused several times as a starter.

However, over multiple generations, the culture can change. Spontaneous mutations, contamination, or the selection of faster-growing subtypes may cause its effectiveness to diminish. Dr. William Davis, who developed this method, recommends starting fresh with new capsules after no more than 20 batches. This ensures the physiological activity of the bacteria remains intact.


Why 20 generations?

Food microbiology studies show that lactic acid bacteria can undergo genetic changes after around 10 to 30 passages.

 

Therefore, we recommend starting fresh with new capsules after a maximum of 20 batches to ensure the bacteria can fully exert their beneficial effects.
